Pre-heat oven to 190ºC or 375ºF
INGREDIENTS:
1 cup unsalted butter
1 cup brown sugar
2 eggs
1 tbsp vanilla
1/4 cup cocoa powder
2 cups flour
1 tsp baking soda
1/2 tsp kosher salt
2 tbsp water
2 cups chocolate chips
METHOD:
Mix the batter...
> mix together the butter, sugar, eggs, and vanilla
> in a separate bowl, whisk together the cocoa, flour, baking soda, and salt
> add in the water and fully incorporate
> fold in the chocolate chips
Bake the cookies...
> drop by the tablespoon-full onto a parchment-paper lined cookie sheet
> flatten each cookie a little
> bake on the middle rack for 9-10 minutes
Tips...
> for super soft cakey cookies, place in a tin or jar while still a little warm, protecting one layer of cookies from the next with a sheet of parchment or wax paper
> for soft cookies with a crisp exterior, leave to cool completely before moving to a tin or jar
Best enjoyed with a cold glass of milk or a hot coffee and a good friend.
